Oven-roasted Garlic & Rosemary Fries

For  a great alternative to frying French Fries, we make fries with a ton of flavor and a unique texture right in the oven. I heard a long time ago that Hindus sued McDonald’s for not divulging that their fries were blanched in a sugary beef stock before being fried. That sparked the idea for these fries.

Stuff you need:

  • potatoes (waxy or floury, personal pref)
  • beef broth
  • sugar
  • good olive oil
  • fresh rosemary
  • whole garlic cloves
  • salt & pepper

Stuff to do:

  • hand-cut the potatoes
  • in a large pot, bring broth (can do up to 50% water) and several tablespoon of sugar, several whole garlic cloves and a sprig of fresh rosemary to boil
  • throw in the fries and blanche for a few minutes – you don’t want to cook them too much though
  • use a large slotted spoon/asian strainer to pull the fries out an layout in a single layer on an olive oil coated sheet pan
  • be sure to get all the garlic cloves onto the sheet pan as well
  • brush on liberal amounts of olive oil, then salt&pepper to taste
  • toss into a pre-heated 450degree oven – flip once when topside is brown (tongs or a spatula can work)
  • they’re done when they look nice and browned and crispy to you – every oven and mouth is different : )

Serve with a ketchup/mayo spread. We like to add Herman’s Kosher Dills, minced, to make it like a 1000 Island dip. Enjoy! (Sorry Hindus)

    Those look so delicious. I think we had the honor of trying them once. Mmmmm making me hungry.

    Speaking of food, eggplant parmesan is supposed to naturally induce labor (if your body & baby are ready) within 48 hours. It worked for me & my neighbor. Hopefully we can have you guys over for dinner before Miss Natahsa makes her grand entrance.

      It’s funny you mention the Eggplant Parm Wive’s Tale, cuz we’re about to make it true. We’re going to eat Eggplant Parmesan at Pasta Brioni and then we’re heading to Scottsdale Osborn to induce. I shit you not :-)
